My contribution to Thanksgiving lunch...

I don't typically make anything for our Thanksgiving meals with family.  I'm not a great cook and don't really LOVE to do it, so I just help clean up. Ha!  Stick to what you're good at, right?  My mom does a jam up job getting everything together, and usually the only person that makes anything is my S-I-L, Ragan. 

I decided that this was my year to break out and help!!! I'm a big girl now, and I have successfully made dinner for Big Jon & myself for the past seven months (knock on wood, both of us are still kickin'!).  I cook about 4-5 nights a week at home, but we eat really healthy and I doubt the rest of family would appreciate me adding flaxseed to their meal. 

So, here is my game plan.  I'm going to stick to these recipes.  I'm not thrilled about buying butter or vegetable oil, but I think contributing to this year's Thanksgiving meal will be worth it.

Hasbrown Casserole & My Yearly Pumpkin gingerbread trifle! LOVE! You will do great!! And remember it's only one day! And you can do it! ;)It'll be fun! And I am sure you'll totally surprise yourself!

I'm sticking to just macaroni and cheese and veggies. Haha. But those cupcakes look amazing.

Ha! You sound like me. Thankfully, I married a cook so I don't have to ever fool with the kitchen unless it's for cleaning up the mess.

Love the recipe for the pineapple upside down cakes. Happy Thanksgiving to you and yours!

Haha I saw "Paula Deen" at the front of your first dish and needed to know no more! I actually have one of her cookbooks from my ex-boyfriend and while unhealthy, for certain occasions, they are delicious!

I am actually making a vegan pumpkin pie - if I tell my stomach it's vegan, it will accept it as healthy food....right?

YAY! Asparagus is what I was asked to bring as well. For Mama and Daddy's meal I brought green bean casserole and a pumpkin roll (skinny taste)! Asparagus and Derby Pie for Ryan's family! I am thankful for you!
