Yesterday was day 2 of the ALL IN Challenge we started with thousands across the country.
We feel SO much better eating clean & getting our water in. We really needed a reset! I prepped a few meals (grilled chicken, broccoli & cauliflower, brown rice & quinoa, potatoes, raw peppers, sautéed peppers, baked chicken, boiled eggs) and snacks (raw nut mix, berry mix, fresh fruit). I have more meal prep tips here.
For dinner we had white chicken chili with avocado (for the healthy fats). It was delicious! Quick, easy, & filling. (I cut the salsa verde from that recipe so it wouldn’t be too hot for the boys…only used about 1 1/4 c instead of 2. I also added some Greek yogurt to theirs like sour cream, but we’re avoiding dairy for Jonathan’s cleanse.)
Makes a ton, & the leftovers are great too.
