Superfood Salad Recipe

Y’all, this is my new jam. It is goooood & packed with tons of great nutrients, antioxidants, fiber, and plant-based protein. That means it will fill you up & you’re getting all kinds of goodies in one dish.



  • organic spinach + Spring mix (sometimes I add in kale & broccoli or raw peppers too for extra veggies)
  • Energy blend from Costco (edamame, pumpkin kernels, cranberries, almonds)
  • Amazing Grass
  • “The Good Bean” – crispy crunchy chickpeas


  • olive oil
  • apple cider vinegar
  • lemon juice
  • a dash of Splenda

Toss into a giant bowl & enjoy!
