Meal prep is so important to maintaining healthy eating habits. I typically prepare supper during afternoon naps on Wednesdays so it’s ready before church. I didn’t have any meat thawed out today, so I kinda threw this together with several random ingredients I had on hand and it ended up being really, really good.
Ingredients:
- cooked quinoa (I already had some left over from yesterday’s dinner)
- raw green peppers
- garbanzo beans
- steamed broccoli
- feta
- olive oil
- lemon juice
- Bragg’s apple cider vinegar
I made some bacon (& broke it into crumbles) for Jonathan to add to his, and I added tomatoes and avocado to mine. It was very fresh & filling. You can just add all the ingredients to taste, toss together, & enjoy!
Best served cold.
