Chocolate Protein Bites…& How I Started to Enjoy Cooking & Baking

I know what you’re thinking…there’s a pretty good chance I missed my calling as a graphic designer, right? Ha! (For real, don’t hate…)

Really though, I am so excited to share this yummy recipe with you! It is DELISH!! (Thank you Tammy for sharing!) It’s super similar to the No Bake Energy Bites except you add a scoop of chocolate Muscle Gain (super high quality, low-carb protein). Yum!!

Not sure if you’ve noticed in the 6 months or so, but I’ve started posting a few more recipes. I am definitely not any type of chef or anything, and I still like to make quick, simple, healthy meals, but I wanted to preface this post by sharing a little background. There was a time when I despised any type of cooking or baking. I WANTED to enjoy it because it has always been on my heart to be a homemaker, and that’s a little bit tough to do when you don’t like to be in the kitchen, but I just didn’t. Or at least, I thought I didn’t. In all reality, that was an excuse (& as I now realize, a lie I was buying into) that led to lots of eating out, processed food, & JUNK. We were both a little overweight, had low energy, and got sick often. When we started eating clean after reading Tosca Reno’s book The Eat Clean Diet, I decided that I would meal prep (even if I didn’t enjoy it) because it was worth it for my family’s health. I’m pretty passionate about disease prevention. I felt like my family deserved my best efforts so I could help invest in their health.

Fast forward…I LOVE being in the kitchen!! In fact, if you come visit us, there is a good chance we’ll be talking as you’re hanging out at our kitchen table while I am doing something in the kitchen. I find so much joy in preparing healthy, homemade, from scratch meals & treats for my family. This is something I have prayed about specifically.  Reading Lori's blog and “Created to Be His Help Meet” have both helped change my thinking and perspective, and honestly, I felt convicted about my attitude. I have made an effort to work joyfully when I’m in the kitchen, & God has honored and answered those prayers, truly changing my heart. I make sure to sing & dance & play & let Jase help while I’m putting things together. And it has become a JOYFUL part of my ministry in our home.

That might seem totally random, but I wanted to share that in case you are a young lady like I was and you believe you don’t enjoy cooking, baking, or spending time in the kitchen. There is hope! I now see it as a way to serve my family and as part of my ministry as a wife and mom. (Jonathan still helps out too.) I feel like that’s just one part of what I was created to do, and now instead of dreading it, it brings me SUCH delight!! I love being able to model healthy habits and teach our kids to take care of their temples. We still eat out occasionally, but for the most part we strive to eat as many of our meals as possible AT HOME each week. Saves money and it’s MUCH healthier. (P.S. SOOOO…All that to get to the recipe. Easy peasy. You better believe ain’t nobody buying Little Debbie’s or Oreos up in here! But we do like healthy treats. Especially on days we work out hard. And there are ways to enjoy healthy, homemade treats. This is a new fave, so ENJOY!

Ummmm, they taste a LOT better than they look.

Ingredients:

  • 1 cup quick cooking oats
  • 1/2 cup natural peanut butter
  • 1/2 cup ground milled flaxseed
  • 1/2 cup raw organic honey
  • 1/2 cup dark chocolate chips (I like Ghiradelli)
  • 1 tsp chia seeds
  • 1 tsp organic vanilla extract
  • 1 scoop chocolate AdvoCare Muscle Gain

Directions:

Measure out all ingredients. Microwave for 1 minute. Mix together & roll out into balls on tin foil. Eat while still warm (*yum!) and then refrigerate. Makes a LOT! Would be a perfect treat to put in your kiddo’s lunch box with a sweet note.

Hi Danielle,

I love making energy bites too. I make them a little different than your recipe but the outcome {yummy} is still the same. One thing I wanted to pass along your way, if you didn't know already, is the chocolate chips. I found a cleaner, whole ingredients brand called: Enjoy Life. You can find them at a Target and I am sure other stores like Whole Foods or Sprouts. They are amazing & do not skimp on the chocolate taste. Just wanted to share. Have a good day!!

That graphic is amazing! Haha, I love it. Thanks for sharing about how you used to feel about cooking, there's things I don't like to do around the house, but when I think about it in the context that you're putting it in, it makes it a lot more enjoyable.

Feel free to share all the chicken recipes/dinner recipes you want, I know I am always looking for easy, healthy meal ideas! :)

I have always loved to bake but not really cook. Cooking is something that is not at the top of my list of things I enjoy but do want to feed my family healthy food. Now I make "snack packs" of veggies every week for my husband to take to work and me to the park. I'm also fortunate that my husband thinks anything taste good! Whatever I make he covers in hot sauce. Problem solved on taste!
