2 Ingredient “Cookies”

This is definitely not an original recipe so I can’t take credit, but I wanted to repost because it’s quick, easy, & yummy!! Plus, you can have these on the challenge. I’m not sure where it came from…I actually think my friend Nikki told me about it a while back.

I made these this morning for breakfast to mix it up a little for baby Jase….it took less than 5 minutes to prepare and 15 minutes to bake. I ate a few with boiled eggs for my breakfast. The base is two ingredients (that are acceptable on the cleanse) & there are tons of options for yummy add-ins.

I know, I know…they don’t look super appetizing…but they taste better than they look. Food photography is not my jam.

Ingredients:

1 cup of Gluten-Free quick cooking oats & 2 pretty ripe bananas.

Directions:

Mash & mix. (Try to stay with me. I know I’m highly technical over here!) Add in your favorite toppings if you want, or they’re great plain too (add-in ideas: blueberries, cinnamon, natural almond butter, chocolate chips, chia seeds, flaxseed, berries, raisins, nut varieties….just get creative!)

Bake for 15 min @ 350 on greased cookie sheet or tin foil.

Danielle I enjoy your blog and have a few questions..

I am a high school student and i'd like to start eating clean now to develop healthy habits in the future. However, my family isnt totally on board. I don't really have a say in what my mom makes for dinner, so how can I pursue a clean eating lifestyle when the rest of my family isn't?

Also, I will be going to college soon, and I need some tips on how to eat healthy there. I am required to have a meal plan but i'm not sure what they are going to serve in the cafeteria. Any ideas?

This is the only way I make cookies! I also use mashed banana in pancakes and when I make brownies (which is usually only for the holidays). It really makes your food more dense/filling and adds a nice light sweetness. :)

Love these!!! I have been baking them for years. I blend bananas and dates in blender and add to mixture. The dates give it a great sweet taste. I freeze and eat them for weeks. You can also blend the oats in the blender to give it a smoother cookie taste with chocolate chips...I use vegan chips and have come to LOVE them
