No-Bake Energy Bites

Okay, I am not one to post recipes. I seriously feel like I have a learning disability when it comes to be following them, so I usually make things that I can just “make” without having to follow directions. I’m a decent cook, but I also stick to pretty simple stuff. Nothing too elaborate for this girl. These, however, are SUPER quick and easy, pretty healthy (when you don’t eat them all in one sitting), and delish (duh!), so I just had to share…again!

I made some last week (a little different, used almond butter and nuts/dried berries), but I made them again tonight and they’re the BOMB! They taste like chocolate chip cookie dough…..yum!! Like I said, they are SO easy, and it’s all ingredients I already have in my house. (Minus the chocolate- I had to get that.)

And here’s what I used:

  • 1 cup (dry) oatmeal (I used old-fashioned Steel Cut oats- store brand)
  • 1/2 cup Naturally More Crunchy Peanut Butter
  • 1/2 cup ground (cold milled) golden flaxseed
  • 1/2 cup Ghiradelli Premium Baking Chips (60% Cacao, Bittersweet Chocolate)
  • 1/3 cup local honey
  • 1 tsp. vanilla

**Mix it all together, separate into small bite size pieces, put in frig. Bam. Took me 5 minutes. And I already ate 3! Ha! (Big Jon loves them too!)

I saw these the other day and made them Monday. They are extremely "dangerous" and I ended up eating too many when I brought a 2 day supply to work yesterday. I really should check the nutrition to see just how bad that really was.

I can't wait to try different variations.
