2 Clean Recipes…Supersized Portions Under 200 Calories

Saw this on Dr. Oz and wanted to share…..DEFINITELY going to try these soon!!!

{Mile-High Pizza Tower} 

Makes 2 servings, 199 calories per serving

Ingredients:

  • Whole wheat tortilla
  • 2 portabella mushrooms, sliced
  • 1 eggplant, cut into 2 large slices
  • 1/4 cup canned tomatoes
  • 2 tbsp shredded part-skim mozzarella cheese
  • 1/2 tsp chopped garlic
  • 1 cup steamed spinach

Directions:
Preheat oven to 375 °F. Toast tortilla until crispy.

Spray a baking sheet with nonstick spray. Place eggplant and mushroom slices on the baking sheet and cook until slightly soft, about 20 minutes. Steam spinach.
In a small bowl, combine canned tomatoes and garlic. Mix well and set aside.
Using tortilla as base, stack 1 eggplant slice on top. Evenly spread the tomato mixture over the eggplant slices. Sprinkle with mozzarella cheese and pile high with spinach. Add portabella mushroom. Continue to stack remaining ingredients.
Bake until cheese melts, about 10 minutes.

{Banana Strawberry Parfait}

Makes 4 servings, 190 calories per serving

Ingredients:

  • 3 slices angel food cake
  • 16 oz strawberry Greek yogurt
  • 1 and 1/2 bananas
  • 1/3 cup orange juice

Directions:
In a small bowl, toss the bananas with orange juice. Layer half of the cake cubes in four dessert dishes. Top with half of the bananas and yogurt. Repeat layering. Make sure to save some bananas for the top!

I love Dr. Oz. I actually just went shopping to try to make a few recipes off his show! The parfait will definetly be a new one on my list :)
